The Jinggu Dabai variety of tea tree boasts the highest amino acid content among Yunnan's large-leaf teas, a rare variety. Its dense hairs are key to its distinctive "white" flavour. This rich amino acid content contributes to the exceptional freshness and is the heart of the Moonlight White flavour, solidifying Jinggu's position as a premium Moonlight White production area.
From these trees, the one bud, one leaf picking standard is used to establish the raw material. This is then naturally withered, a process that creates a distinctive appearance with one side of the leaves densely covered with silvery white hairs and the other side dark brown, hence the name "Moonlight White".
This is not a newly minted tea, however. Rather, it is a careful selection of high-quality Jinggu Moonlight White tea which, through innovative alternating aerobic and anaerobic storage techniques, undergoes a period of precise aroma cultivation and mellowing. Through controlled temperature, humidity, and atmosphere, it promotes a complex and gentle transformation of its constituents and removes the astringency of new tea, fostering a more mellow and full-bodied, rich, and harmonious tea.
